Lorsque le beurre est totalement absorbé par la farine, ajoutez le sucre glace et la poudre de noisettes. Ajoutez l&rsquo;oeuf battu. 									<ul><li>Réhydratez la gélatine dans un bol d&rsquo;eau bien froide.</li><li>Pesez et coupez votre beurre en morceaux.</li><li>Fouettez les oeufs entiers et le sucre, blanchissez.</li><li>Portez à ébullition la purée de fruit de la passion. </li><li>Versez la sur le mélange oeuf-sucre bien blanchit.</li><li>Transvasez à nouveau dans la casserole et faites cuire jusqu&rsquo;à 82°C.<br />La crème ne doit surtout pas bouillir mais simplement épaissir.</li><li>Filtrez la à l&rsquo;aide d&rsquo;un chinois étamine pour retirer les éventuels morceaux.</li><li>Ajoutez ensuite la feuille de gélatine bien égouttée puis les cubes de beurre petit à petit tout en mixant.</li><li>Filmez la crème au contact, laissez la refroidir et conserver au réfrigérateur le temps de finir les autre éléments.</li></ul>								</div>

									<ul><li>Faites cuire les fonds de tarte à blanc (sans rien dessus) pendant 10 min à 160°C.</li><li>Puis disposez un fond de crème de noisettes sur la pâte.</li><li>Remettez au four et cuire encore 10 à 15 min environ. Les bords des tartelettes doivent être bien dorés et la crème de noisettes légèrement colorée et encore moelleuse.</li><li>Laissez bien refroidir les tartelettes.</li><li>Ajoutez sur le dessus un fine couche de gel passion, puis la crème à la passion jusqu&rsquo;au bords de la tarte.</li><li>Lissez le tout et enfin, ajoutez votre ganache, fraichement montée au robot, sur le dessus, en réalisant un beau pochage.</li></ul>								</div>
